Var að spá hvort einhver hér hefur búið sér til jerky, ef svo er úr hvaða kjöti og hvaða marinering hafi verið notuð. Hef verið að skoða þetta soldið og tekið eftir að það eru aðallega tvær aðferðir sem menn nota, annars vegar skera kjöt í strimla og svo annars hakka kjötið og nota sprautu til að búa til strimla. Já tek undir með dgs, gaman að vita hvort að einhver lumi ekki á góðri uppskrift af beef jerky, þetta er alveg tær snilld að borða og þá helst þurkuðu strimlarnir. Þetta er mjög gott, og geymist vel, fyrirferðalítið og næringaríkt. Veit að Jói Vilhj. byssusmiður var að selja ofna, marineringu og kryddmix, hled að hann sé ennþá með þetta. Kveðja Guðm. Örn |

Hér eru 3 uppskriftir af jerky, 2 með nautakjöti og 1 með villibráð mjög ítarleg, reyndar á ensku en flestir geta nú staglast í gegnum það, verði ykkur að góðu. Kv. Guðmundur Örn. 1) BEEF JERKY Select a 1/2 inch thick flank or top round steak. trim away all fat then partially freeze until firm. Slice across the grain in a 1/4 to 1/2 inch wide strips. Place meat strips in a shallow dish or heavy plastic bag. Add soy or terriyaki sauce to cover meat. If desired onion or garlic powder or Worcestershire sauce may be added. Toss to coat each piece. Cover and refrigerate several hours or over night. Lift meat from marinade, drain will then air dry for a couple of hours. Arrange meat strips in single layer on fine wire screen or cake cooling rack. Place in low oven (175+ to 200+F) or slowly smoke-cook in smoker until meat is completely dried. Store in air-tight container. Serve as a snack or appetizer. 2) BEEF JERKY 1-2 lb lean steak or roast, cut to desired thickness 1/2 tsp seasoned salt 1/2 tsp garlic powder 1/2 tsp pepper 1/2 tsp salt 2 tsp liquid smoke (optional) 1/4 cup soy sauce 1/4 cup Worchestershire sauce Directions: Mix all ingredients besides beef in a bowl. Marinate meat in bowl at least 2 hours. Preheat oven to 150-200F. Place marinated meat on baking sheets and slide onto oven racks. Leave oven door open a crack and let sit until dry. 3) VENISON JERKY ( VILLIBRÁÐ ) Meðferð á kjöti og uppskrift. Muscles from the round are usually used since they are easily prepared and contain little fat. However, any muscle in the carcass can be used. Muscles from the round or leg are most often used today. It is recommended that muscles be removed from the carcass and made into jerky the day after the kill to prevent unnecessary bacterial growth. However, aged meat can be used. Meat which has been frozen and thawed can also be used satisfactorily. Freezing meat for a month before jerky is made insures that it will be free from live parasites which are sometimes found in game meat. In order to have freshly made jerky during the year, many people freeze meat which is to be made into jerky. The meat is then thawed in small quantities and made into jerky as it is needed. Meat should be trimmed of fat and connective tissue and then cut into strips one-fourth inch thick, one inch wide, and up to a foot in length. Cut with (not across) the grain. Small muscles, one or two inches in diameter, are often separated and made into jerky without being cut into strips. These thicker pieces of meat take longer to absorb the salt and seasonings and longer to dry, but with these exceptions, no changes in the jerky recipes need to be made. Some recipes call for drying jerky in the sun. Because of sanitation problems, this method is not recommended. If jerky is dried to a low moisture content. (it should be crispy and leathery), it may be stored at room temperature in air-tight containers. Store moistened jerky in the freezer for no longer than a month; the saltiness of the product encourages rancidity. Color of the finished jerky ranges from a light brown to black. Color variations depend upon the recipe used, the species of animal, and the age of the animal. The latter two factors are related to the myoglobin concentration in fresh meat. Myoglobin is the pigment in meat responsible for color. Higher levels of myoglobin result in darker colored jerky. Checklist for Making Venison Jerky 1. Use fresh lean meat free of fat and connective tissue. 2. Slice the meat with the grain, not crosswise. 3. Add the correct amount of seasoning. If you do not have a scale, use approximate equivalent measures for jerky recipes as follows: Salt 10.5 oz.= 1 cup 8.0 oz.= 3/4 cup 2.0 oz.= 3 level tablespoons Sugar 5.0 oz.= 2/3 cup 3.5 oz.= 1/2 cup 1.0 oz.= 2 level tablespoons Ground Spices 0.5 oz.= 2 level tablespoons .08 oz.= 1 level tablespoons 4. Cure the meat the correct length of time at refrigerator temperatures. Salted meat should be placed in plastic, wooden, stainless steel or tone containers. 5. Keep the drying or smoking temperature in the smokehouse or oven at 120 degrees Fahrenheit or below after the first 30 minutes. Oven or smokehouse temperatures of 170-190 degrees Fahrenheit are often recommended for the first 30 minutes. 6. If an oven is used, line the sides and bottom with aluminum foil to catch the drippings. Open the door to the first or second stop to allow moisture to escape and to lower the oven temperature when necessary. 7. Use any hardwood for smoking. Do not use pine, fir or conifers. 8. Remove the jerky from the smokehouse or oven before it gets too hard for your taste. Five pounds of fresh meat should weigh approximately 2 pounds after drying or smoking. 9. Store jerky in clean jars or plastic bags, or wrap it in the freezer paper and freeze it. Although properly dried jerky will last almost indefinitely at any temperature, its quality deteriorates after a few months. 10. Alter seasonings and smoking or drying times to suit individual tastes. Examples of spices which could be added to 5 pounds of meat include: 2 tablespoons chili powder, 2 tablespoons of garlic powder, 2 tablespoons onion powder, 1 tablespoon ginger, 2 tablespoons coriander or 1 tablespoon allspice. |

Dúi - ég veit ekki hvort þú hefur reynt þessar uppskriftir en mig langaði að reyna. Ég marineraði bita af þessari líka fínu nautalund í Worchesterhiresósu en gleymdi kjötinu í sósunni í sólarhring eða meira. Svo þurrkaði ég það í ofninum og viti menn, þetta fína beef-jerky! Það var að vísu full sterkt Worchesterhiresósubragð af því fyrir minn smekk en öðrum fjölskyldumeðlimum líkaði það vel og spændu þetta í sig. Nú ætla ég að marinera aðeins öðruvísi næst en ég mæli með þessu. Þetta var magnað! Eru fleiri sem hafa reynt þetta? Þetta er a.m.k. komið á nestismatseðlinn minn fyrir rjúpuna og þá takvörkuðu útivist sem ég stunda. |

Hæ Prófaði um daginn 1 tsk. salt 1 marið hvítlauksrif 1/4 tsk. mulinn pipar 2 msk sojasósu 1 msk Worchestershire sósu Notaði folaldalundir, mjög fitulítið kjöt. Hreinsaði alla fitu sem ég sá og frysti í 2 tíma. Skar í ræmur og setti í maríneringuna. Reyndar tók ég smá hluta af þessu og setti í Cai's Hickory maríneringu. Þetta fékk síðan að vera í kæliskáp í sólarhring. Þurrkaði kjötstrimlana með tröllaskeini og stakk tannstöngli í gegnum og hengdi þetta á grindina í bakaraofninum. Þar hékk þetta í 10 klst við 70°C. Örlítið hrossabragð fannst, en alls ekki mikið. Annars var þetta bara mjög gott. (Meira að segja aðal hestamaðurinn í vinnunni hámaði þetta í sig...) Tæpt kíló af kjöti rýrnaði um 30% í ofninum og um hin 70% á einum og hálfum degi... Næst er að prófa aðrar kjöttegundir og marineringar. Mæli með þessu -Millennium |
